CHEESY ITALIAN TURKEY CAULIFLOWER RICE CASSEROLE

This Cheesy Italian Turkey Cauliflower Rice Casserole is as delicious as it sounds! Packed with ground turkey, cauliflower rice, Greek yogurt, fresh veggies, and a blend of cheeses, this low-carb dish is rich, creamy, and full of flavor. It’s a guaranteed crowd-pleaser!

INGREDIENTS (SERVES 6)

  • 1 tbsp olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 2 tsp Italian seasoning
  • Salt & pepper, to taste
  • 4 cups baby spinach
  • 14 oz canned fire-roasted diced tomatoes, drained
  • 10 oz cooked cauliflower rice
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup light cream cheese
  • 4 tbsp grated Parmesan cheese
  • 1 cup shredded part-skim mozzarella cheese

INSTRUCTIONS

  • Preheat & Sauté: Preheat oven to 375°F. Heat olive oil in a large skillet over medium-high heat. Add diced onions and cook for 3-4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  • Cook the Turkey: Add ground turkey, Italian seasoning, salt, and pepper to the skillet. Cook for 6-8 minutes, breaking it up as it browns. Stir in spinach and diced tomatoes, cooking for another 1-2 minutes until the spinach wilts. Drain any excess liquid.
  • Prepare the Base: Lightly spray a 9×13-inch casserole dish with cooking spray. Warm the cooked cauliflower rice and mix it with Greek yogurt, cream cheese, and Parmesan cheese in the dish. Stir until the cream cheese melts into the rice.
  • Assemble & Bake: Add the turkey mixture to the casserole dish and stir to combine. Top with shredded mozzarella cheese. Bake uncovered for 20-25 minutes until the cheese is melted and bubbly. Let it rest for 5 minutes before serving.
