CAULIFLOWER HASH BROWNS

INGREDIENTS

  • 12 ounces riced cauliflower (1.5 cups)
  • ½ small onion, grated
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

INSTRUCTIONS

  • Mix the Ingredients: In a medium bowl, combine the riced cauliflower, grated onion, shredded cheese, eggs, garlic powder, salt, and pepper. Stir until well combined.
  • Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Form the Hash Browns: Scoop about 3 tablespoons of the mixture and shape it into a small patty.
  • Cook Until Golden Brown: Place the patties in the skillet, being careful not to overcrowd the pan. Cook for about 2-3 minutes per side, or until golden brown and crispy.
  • Repeat & Serve: Continue cooking the remaining mixture in batches. Serve warm and enjoy!
