CAJUN PASTA SALAD

Cajun Pasta Salad—now that’s a true standout! Few things scream summer like a backyard BBQ, and the best ones always feature incredible side dishes. This Cajun Pasta Salad is hands down one of our all-time favorites.

INGREDIENTS

  • Kosher salt
  • 1 lb elbow macaroni
  • 2 tbsp high-quality olive oil, divided
  • 1/2 cup finely minced shallots
  • 1 cup red bell pepper, cored, seeded, and finely chopped
  • 1 cup finely chopped celery
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 2 tsp Kosher salt
  • 1 tsp freshly ground black pepper
  • 3 tbsp Creole/Cajun or whole grain Dijon mustard (see Note)
  • 1 1/2 cups mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp hot sauce (e.g., Tabasco, Crystal’s)
  • 1/4 cup fresh parsley, chopped (for garnish)

INSTRUCTIONS

  • Bring a pot of salted water to a boil and cook the pasta for about 9 minutes, until tender. Drain and rinse under cool water.
  • Transfer the pasta to a large bowl and toss with 1 tablespoon of olive oil.
  • In a separate medium bowl, combine the remaining ingredients, including the other tablespoon of olive oil. Add 1 to 2 tablespoons of water to slightly thin the mixture.
  • Adjust seasonings to taste.
  • Add the pasta to the mixture and stir to combine.
  • Garnish with chopped parsley before serving.
