This super simple cheesecake recipe comes together in just 5 minutes using a microwave. Add your favorite fruit or sauce on top for a tasty treat!
INGREDIENTS
- 1 tablespoon butter
- 2 sheets graham cracker
- 4 oz (115 g) cream cheese, softened
- 2 tablespoons sugar
- 3 drops vanilla extract
- 5 fresh raspberries, for garnish
PREPARATION
- Melt the butter in a small microwave-safe ramekin. Swirl the ramekin to coat the sides with butter.
- Crush the graham crackers into fine crumbs and mix with the melted butter in the ramekin. Use a spoon to press the crust evenly against the bottom.
- In a small bowl, combine the cream cheese, sugar, and vanilla extract, stirring until smooth.
- Spread the cream cheese mixture over the graham cracker crust.
- Microwave on half power for about 4 minutes, checking every 45 seconds. Make sure the cheesecake doesn’t bubble over the sides of the ramekin.
- Chill the cheesecake in the freezer for at least 30 minutes, or until fully cooled.
- Loosen the cheesecake’s edges with a knife, then invert onto a plate or enjoy directly from the ramekin.
- Garnish with fresh raspberries.
