BROCCOLINI, CHICKEN SAUSAGE, AND ORZO SKILLET

There are times when you just don’t want to deal with assembling separate parts of a meal. For those moments, all-in-one dishes like this one are perfect. Tender broccolini, spicy chicken sausage, and orzo pasta come together in a single skillet to create a creamy, satisfying dinner that only needs a bowl and a fork.

Ingredients

  • 2 tablespoons olive oil
  • 8 ounces fully cooked hot Italian chicken sausage, sliced into 1/4-inch rounds
  • 2 bunches broccolini (about 1 pound), roughly chopped
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 1/2 cups low-sodium chicken broth
  • 1/2 cup grated Parmesan, plus more for garnish

Instructions

  • Heat olive oil in a 10-inch skillet (regular or cast iron) over medium-high heat. Add the sausage and cook for 3 to 4 minutes, browning it on both sides.
  • Stir in the broccolini, season with salt and pepper, and sauté for about 5 minutes, until the broccolini is vibrant and almost tender.
  • Add the minced garlic and orzo, sautéing for another minute until fragrant.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, cover the skillet, reduce the heat to a simmer, and cook for about 10 minutes, or until the orzo is al dente and the liquid is absorbed. (If the pasta is done before all the liquid is absorbed, uncover the skillet and simmer for an additional minute to evaporate the excess liquid.)
  • Stir in the 1/2 cup of Parmesan and season with additional salt and pepper to taste. Serve with extra grated cheese, if desired.
