BREAKFAST CREPES

This simple crepe recipe makes it easy to whip up delicious crepes from scratch in no time! Whether you prefer them sweet or savory, the possibilities are endless. Since I have a sweet tooth, this post will focus on sweet crepes and all the tasty ways to enjoy them!

EQUIPMENT

  • Non-stick skillet or crepe pan
  • Crepe maker (optional)
  • Hand mixer or whisk
  • Mixing bowl
  • Spatula

INGREDIENTS

Crepe Batter

  • 2 large eggs
  • 1 ½ cups milk (2%, 1%, or whole) (355ml)
  • 1 tsp canola or vegetable oil, or 1 Tbsp melted butter (5ml)
  • 1 cup all-purpose flour (120g)
  • ¼ tsp salt (1g) (use ½ tsp for savory crepes) (2g)
  • 1 tsp vanilla extract (for sweet crepes) (5ml)
  • 1 Tbsp granulated sugar (for sweet crepes) (12.5g)

Toppings (optional)

Strawberries, whipped cream, raspberries, Nutella, powdered sugar, maple syrup, or any of your favorites.

INSTRUCTIONS

  • Prepare the Batter:
    • Using a Blender: Combine all ingredients and blend on medium speed for 30 seconds to 1 minute until smooth.
    • Using a Mixer or Whisk: In a mixing bowl, whisk together eggs, milk, and oil (or melted butter). Add flour, sugar, vanilla extract, and salt. For savory crepes, omit sugar and vanilla. Stir until the batter is smooth and slightly runny—if too thick, add a little more milk or water.
  • Rest the Batter (Optional):
    • Cover the batter and refrigerate for 1 hour to allow the gluten to relax. This step helps create delicate crepes with a tender texture, but if you’re short on time, you can skip it.
  • Cook the Crepes:
    • Heat a non-stick skillet or crepe pan over medium heat. Add a little butter and let it melt.
    • Lift the pan off the heat and pour about ¼ cup of batter into the center. Tilt and rotate the pan in a circular motion to spread the batter evenly across the bottom.
    • Return the pan to the heat and cook for about 1 minute, until the top is dry. Flip and cook for another 10–20 seconds. Flip once more to achieve an even golden color.
    • Stack cooked crepes on a plate and repeat with the remaining batter.
  • Assemble & Serve:
    • Add your favorite toppings and fillings. You can fold the crepe into a triangle or roll it up before adding more toppings on top. Enjoy!
