Got some canned fish in your pantry and not sure what to do with it? Try this delicious sardine pâté straight from my mom’s recipe book!
INGREDIENTS
- 1 can (3.5 oz / 100g) oil-packed sardines, drained
- 10 olives, chopped
- ½ onion, chopped
- Chives and coriander, minced (to taste)
- 3 tbsp fresh lime juice (about one lime)
- ½ cup (115g) mayonnaise
- 1 tbsp olive oil
- Salt and freshly ground pepper, to taste

INSTRUCTIONS
- Remove the sardines from the can. If desired, split them open with a small knife, remove the backbone, and discard any tails. You can also leave them whole if you prefer.
- Transfer the sardines to a bowl and mash them with a fork until smooth.
- Add the chopped onion, olives, chives, and coriander. Mix well.
- Stir in the lime juice, mayo, and olive oil, mixing until creamy and well combined.
- Season with salt and pepper to taste, then give it a final stir.
- Transfer the pâté to a serving dish, cover with plastic wrap, and refrigerate for about an hour.
- Serve chilled on toast or as a sandwich spread—absolutely delicious!
