This traditional Russian One Pot Chicken and Rice Plov is a flavorful and hearty dish. Enjoy the perfect combination of rice, tender chicken, onions, and carrots all cooked together in one pot!
INGREDIENTS
- 1 lb boneless, skinless chicken thighs
- ¼ cup extra virgin olive oil
- 1 onion, chopped
- 3 carrots, chopped or grated
- 2 cloves garlic, peeled (whole)
- 1½ cups rice, rinsed (basmati works well)
- Salt, to taste
- Pepper, to taste
- 2 cups water

INSTRUCTIONS
- Cut the chicken thighs into smaller pieces.
- Heat the olive oil in a medium-sized pot or shallow pan over medium heat.
- Add the chicken pieces to the pot, seasoning with a generous pinch of salt and pepper. Sauté for 7 minutes.
- Chop the onion and add it to the chicken. Sauté for an additional 3 minutes.
- Grate or chop the carrots and add them to the pot. Reduce the heat to low.
- Peel the garlic cloves and add them to the pot. (You can remove the garlic later if you prefer not to eat it).
- Pour in the water and taste it to adjust the seasoning. Add more salt and pepper as needed.
- Rinse the rice in a strainer until the water runs clear.
- Add the rice to the pot with the chicken and vegetables without stirring.
- Cover the pot and simmer for 30 minutes. Afterward, give it a gentle stir and simmer for another 10 minutes, ensuring the water has been fully absorbed.
Notes: This dish can be made ahead of time and is great for meal prep. It stores well in the fridge for several days.
