INGREDIENTS

Peanut Butter Layer:

  • 1 cup natural peanut butter (I use Smucker’s Natural Crunchy)
  • 4 tbsp butter, softened
  • 2/3 cup Lakanto monk fruit powdered sweetener
  • 2 tbsp coconut flour

Chocolate Topping:

  • 1 tbsp butter
  • 1 (3oz) Lily’s Creamy Milk Chocolate Candy Bar

INSTRUCTIONS

  • Prepare the Peanut Butter Layer:
    • In a mixing bowl, beat the softened butter at high speed.
    • Add powdered monk fruit sweetener, peanut butter, and coconut flour.
    • Mix on medium speed until well combined and smooth.
  • Set the Base:
    • Line a 9×9-inch baking pan with parchment paper (or grease it).
    • Spread the peanut butter mixture evenly in the pan.
    • Place in the freezer for 10 minutes to firm up.
  • Make the Chocolate Topping:
    • Break the Lily’s Chocolate Bar into small pieces and place them in a greased, microwave-safe bowl.
    • Add 1 tbsp butter.
    • Microwave on low power for 30 seconds, then stir.
    • If not fully melted, continue microwaving in 15-second intervals, stirring between each to prevent overheating.
  • Assemble the Bars:
    • Remove the peanut butter layer from the freezer.
    • Pour the melted chocolate over the top and spread evenly with a spatula.
    • Return to the freezer for several hours or overnight to set.
  • Serving & Storage:
    • Once set, slice into bars.
    • Store in the refrigerator or freezer for the best texture.

  • Sugar alcohols in monk fruit sweetener and Lily’s Chocolate Bar are not included in the nutritional calculation since they are typically subtracted for net carbs.
  • You can substitute almond flour for coconut flour at a 1:4 ratio (1/4 cup coconut flour = 1 cup almond flour).
