BEEF PAPRIKASH

This Hungarian-inspired Beef Paprikash is a rich and flavorful dish, perfect for the fall and winter months! Made with sweet Hungarian paprika, it’s best served over egg noodles, rice, or mashed potatoes, and topped with sour cream and fresh dill for an extra burst of flavor.

INGREDIENTS

  • 2 lb beef chuck roast, cut into 1-2 inch cubes
  • Salt & pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp sweet paprika
  • ½ tsp dried oregano
  • ½ tsp caraway seeds, lightly crushed
  • 15 oz can of crushed tomatoes
  • 2 cups beef broth
  • 1 bay leaf

For Serving (Optional)

  • Sour cream
  • Fresh dill
  • Fresh parsley

INSTRUCTIONS

  • Season the beef cubes with a generous pinch of salt, pepper, and 2 tbsp of flour. Toss to coat evenly.
  • Heat 1-2 tbsp olive oil in a large Dutch oven over medium-high heat until shimmering. Add the beef in a single layer—if it doesn’t sizzle, the oil isn’t hot enough. Cook undisturbed for one minute, then flip and cook another minute to brown all sides. Remove the beef and set it aside. Repeat with the remaining beef.
  • In the same Dutch oven, add a bit more olive oil and reduce the heat to medium. Add the diced onions and cook for 3-5 minutes until softened.
  • Stir in the diced bell peppers and garlic and cook for another 1-2 minutes.
  • Add the paprika, oregano, and crushed caraway seeds. Stir to coat the vegetables in the spices.
  • Increase the heat to medium-high, then deglaze with the crushed tomatoes and beef broth. Add the bay leaf and return the browned beef with its juices to the pot.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour.
  • After an hour, remove the lid, stir, and raise the heat to medium-low. Cook uncovered for another hour until the beef is tender and the sauce has reduced, stirring occasionally to prevent scorching.
  • Remove from heat and serve over egg noodles, mashed potatoes, or enjoy it on its own. Top with sour cream and garnish with fresh dill or parsley.
