Ingredients
- 1 lb. banana peppers (about 6-7 peppers)
- 1 serrano or jalapeño pepper
- 2-4 garlic cloves, sliced
- 1 cup white vinegar
- ½ cup water (bottled or filtered)
- 2 tsp white sugar
- 1 tsp salt
- ¼ tsp black pepper
- 1 tsp ground mustard seed
- 1 tsp celery seed
Instructions
- Sterilize a mason jar (without the lid) by placing it in a large pot of water. Bring the water to a boil and let the jar sterilize for about 10 minutes. Use tongs to remove the jar from the pot.
- Cut off the tops of the banana peppers and serrano (or jalapeño), removing the seeds. Slice them into rings and pack them into the mason jar.
- In a saucepan, bring the water, vinegar, and spices to a boil. Reduce the heat and let it simmer for 5 minutes. Remove the saucepan from heat.
- Using a funnel, pour the hot brine mixture over the peppers in the jar.
- Seal the jar and let it cool at room temperature for about 2 hours. Then, refrigerate for 2-3 days to allow the flavors to meld and the pickling to develop.
- Once ready, remove from the fridge and blend until smooth. Adjust the thickness or seasoning to taste, if needed.
- Transfer the hot sauce to bottles and consume within a month.
