Banana Cake – This easy sheet cake version of a classic banana cake is the perfect dessert to use up overripe bananas! Topped with creamy cream cheese frosting, this banana cake is a sweet and satisfying treat everyone will love!
Ingredients:
Banana Cake:
- 3 very ripe bananas
- 8 tablespoons butter (softened)
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup chopped nuts (optional)
Cream Cheese Frosting:
- 8 ounces cream cheese (softened)
- 1/4 cup butter (softened)
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
Instructions:
- Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking pan with cooking spray. Set aside.
- In a large mixing bowl, mash the bananas. Add the softened butter, brown sugar, and granulated sugar. Beat on medium-high speed for 2-3 minutes until the mixture is creamy.
- Add the vanilla extract and eggs, mixing until fully combined.
- Stir in the flour, baking soda, baking powder, cinnamon, and salt. Mix until smooth. If using nuts, fold them into the batter.
- Pour the batter into the prepared baking pan and bake for 23-27 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, make the cream cheese frosting. Beat together the softened cream cheese, butter, and vanilla extract. Gradually add in the confectioners’ sugar, one cup at a time, mixing until smooth and fluffy.
- Once the cake has completely cooled, spread the frosting evenly over the cake. Decorate as desired and refrigerate until ready to serve. Enjoy!
