BANANA CAKE

Banana Cake – This easy sheet cake version of a classic banana cake is the perfect dessert to use up overripe bananas! Topped with creamy cream cheese frosting, this banana cake is a sweet and satisfying treat everyone will love!

Ingredients:

Banana Cake:

  • 3 very ripe bananas
  • 8 tablespoons butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped nuts (optional)

Cream Cheese Frosting:

  • 8 ounces cream cheese (softened)
  • 1/4 cup butter (softened)
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar

Instructions:

  • Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking pan with cooking spray. Set aside.
  • In a large mixing bowl, mash the bananas. Add the softened butter, brown sugar, and granulated sugar. Beat on medium-high speed for 2-3 minutes until the mixture is creamy.
  • Add the vanilla extract and eggs, mixing until fully combined.
  • Stir in the flour, baking soda, baking powder, cinnamon, and salt. Mix until smooth. If using nuts, fold them into the batter.
  • Pour the batter into the prepared baking pan and bake for 23-27 minutes, or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, make the cream cheese frosting. Beat together the softened cream cheese, butter, and vanilla extract. Gradually add in the confectioners’ sugar, one cup at a time, mixing until smooth and fluffy.
  • Once the cake has completely cooled, spread the frosting evenly over the cake. Decorate as desired and refrigerate until ready to serve. Enjoy!
