  • 4 to 8 slices of bacon

INSTRUCTIONS

  • Cut the chicken into four equal pieces and pound each to about 1/4 inch thick.
  • In a bowl, mix the softened cream cheese, chopped green onions, and shredded pepper jack cheese together.
  • Place a quarter of the cheese mixture in the center of each chicken piece.
  • Roll the chicken up from the longer side, keeping the cheese mixture inside.
  • Wrap each chicken roll with 1 to 2 slices of bacon and secure with toothpicks if needed.
  • Arrange the wrapped chicken on a baking sheet with edges or in a baking dish.
  • Bake at 375°F for 30 minutes, then broil the tops for 5 minutes to brown and crisp the bacon.
  • Turn each chicken roll over and broil for another 3 minutes to crisp the bottom.
