Vegan Pad Thai Casserole is a simple, flavorful, and satisfying dish. Everything is assembled in a casserole dish, making it perfect for meal prep, easy to transport, and convenient to reheat when you’re ready to enjoy. I recommend adding the sauce just before reheating to keep it creamy and fresh. Alternatively, it’s also delicious served chilled!
INGREDIENTS
Pad Thai:
- 14 ounces dried Pad Thai noodles, cooked and drained
- 2 cups broccoli florets, lightly cooked and drained
- 1/2 to 1 cup toasted peanuts
- 3/4 cup sliced green onions
- 1/2 cup carrot ribbons
- 1/2 cup bean sprouts
Sauce:
- 1 1/4 cup water (adjust for desired sauce thickness)
- 3/4 cup peanut butter
- 1/4 cup gluten-free soy sauce
- 3 tablespoons lime juice (plus extra for serving)
- 2 tablespoons maple syrup
- 2 tablespoons sesame oil (optional)
- 1 teaspoon powdered ginger
- 1/4 to 1 teaspoon crushed red pepper flakes, to taste
- 1/4 teaspoon cayenne (optional, to taste)
- Salt, to taste
Optional Additions:
- Finely grated fresh ginger
- Air-fried tofu cubes
- Cooked and chopped Just Egg
INSTRUCTIONS
- Cook the Noodles: Prepare the Pad Thai noodles according to package instructions. Once cooked, drain and rinse with cold water until cooled. Toss with a little sesame or garlic chili oil, then set aside.
- Prep the Broccoli: Lightly simmer the broccoli for 1-2 minutes until bright green and slightly softened. Drain and set aside.
- Toast the Peanuts: Use roasted and salted peanuts, or toast raw peanuts in a heavy pan over medium heat until lightly browned. Remove from heat and set aside.
- Prepare Vegetables: Slice the green onions and create carrot ribbons by shaving the sides of a carrot with a vegetable peeler.
- Optional Protein: If desired, add air-fried tofu cubes or cooked and chopped Just Egg for extra protein.
- Make the Sauce: Blend all sauce ingredients in a blender until smooth and creamy. Adjust water to achieve your preferred consistency.
- Assemble the Casserole:
- Layer the cooked noodles in the bottom of a casserole dish.
- Add the broccoli, green onions, carrot ribbons, toasted peanuts, and bean sprouts.
- Include optional tofu or Just Egg, if using.
- Store the Sauce: Keep the prepared peanut sauce in a jar until ready to serve.
- Serve:
- Before serving, pour the peanut sauce over the casserole and stir gently to combine.
- Serve chilled or bake in a 350°F oven for about 15 minutes to warm through.
- Finish and Enjoy: Add freshly grated ginger and a squeeze of lime juice for extra flavor before serving.
