Elderberries have been used for centuries to support immune health. This easy-to-make syrup harnesses the power of these berries to create a delicious and effective remedy for colds, flu, and other winter ailments.

INGREDIENTS
- 1 cup Dried Elderberries
- 4 cups Water
- 1 tsp Cinnamon
- 1 tsp Ground Ginger
- 1/2 tsp Ground Cloves
- 1 tbsp Rosehips (optional)
- 3/4 cup Local Raw Honey or Pure Maple Syrup (adjust to taste)
- 1/4 cup Arrowroot Powder (optional for thickening)
INSTRUCTIONS
- Combine Ingredients: In a large pot, mix elderberries, water, cinnamon, ginger, cloves, and rosehips (if using).
- Heat: Set the pot to medium heat and bring the mixture to a boil.
- Simmer: Reduce the heat to medium-low and simmer for approximately 45 minutes, or until the liquid reduces by half.
- Optional Thickening: For a thicker syrup, create a slurry by whisking 1/4 cup arrowroot powder with 1/2 cup water. After boiling for 30 minutes, stir the slurry into the mixture. Simmer for an additional 10–15 minutes before proceeding.
- Cool: Remove the pot from heat and let the mixture cool to room temperature.
- Strain: Pour the mixture through a mesh strainer or cheesecloth into a bowl. Press the berries with a spoon to extract as much liquid as possible. Discard the leftover pulp.
- Sweeten: Stir in the honey or maple syrup, adjusting the amount based on your sweetness preference (start with 1/2 cup and add more if needed).
- Store: Transfer the syrup to a mason jar or other airtight container. Seal tightly and refrigerate for up to 3 months.
