This Orange Vinaigrette is packed with fresh citrus and comes together quickly with just eight simple ingredients, many of which you might already have in your kitchen. Its light, tangy flavor makes it perfect for spring mix, spinach, or any tender greens that need a flavorful yet light dressing. I love to drizzle it over spring greens topped with almonds, gorgonzola, and red onions, or use it on avocados stuffed with chicken salad, walnuts, and goat cheese.
Ingredients:
- 2 tablespoons champagne vinegar (or white wine vinegar or apple cider vinegar)
- ¼ cup fresh orange juice (about the juice from 1 orange)
- 1 tablespoon orange zest
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- ⅓ cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together the champagne vinegar, orange juice, orange zest, honey, Dijon mustard, and a pinch of salt.
- Slowly drizzle in the olive oil while continuing to whisk until well combined.
