INGREDIENTS
- 40 ounces pineapple chunks (2 cans, 20 oz each, well-drained – reserve ⅓ cup of the juice)
- 1 cup sugar
- 5 tablespoons flour
- ¼ teaspoon salt
- 1 cup sharp cheddar cheese (shredded)
- ¼ cup butter (melted)
- 1 sleeve Ritz crackers (coarsely crushed, about 30 crackers)
INSTRUCTIONS
- Preheat oven to 350°F. Butter an 8×8-inch baking dish and set aside.
- Drain the pineapple chunks thoroughly. Use a sieve to remove excess liquid and blot dry. Reserve ⅓ cup of the juice. Transfer the pineapple chunks to a large bowl.
- In a medium bowl, mix together sugar, flour, salt, and the reserved pineapple juice. Add the pineapple chunks and toss until well coated.
- Spoon the pineapple mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- In a small bowl, combine the crushed Ritz crackers with the melted butter. Spread the buttery cracker crumbs evenly over the pineapple and cheese layer.
