INGREDIENTS
- 6 tbsp unsalted butter, softened to room temperature
- ⅓ cup brown sugar
- ⅓ cup white sugar
- 1 egg, at room temperature
- 1½ tsp vanilla extract
- 1 cup + 2 tbsp all-purpose flour
- 1½ tbsp cornstarch
- ½ tsp baking soda
- Pinch of salt
- ¾ cup semi-sweet chocolate chips
- ½ cup toffee bits
- ½ cup sweetened shredded coconut
- ½ cup chopped pecans
INSTRUCTIONS
- Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream Butter & Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and white sugar together for about 2 minutes, until light and fluffy. Add the egg and vanilla extract, and beat until smooth and creamy.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt until well combined.
- Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the butter mixture, stirring until fully incorporated. Fold in the chocolate chips, toffee bits, coconut, and pecans until evenly distributed throughout the dough.
- Shape Dough Balls: Roll 2 tablespoons of dough into a ball. To create a textured surface, split the dough ball in half with your fingertips, rotate the halves 90°, and press the jagged sides back together with the rough surface facing up. Gently reshape into a ball, being careful not to smooth out the uneven texture. Repeat with the remaining dough, spacing the balls about 2½ inches apart on the prepared baking sheet.
- Bake: Bake the cookies for 9-11 minutes, or until the edges are light golden brown and set while the centers remain soft and puffy. Rotate the baking sheet halfway through baking for even results.
- Cool & Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
