THAI SALAD (WITH PEANUT DRESSING)

Thai salad with peanut dressing is a vibrant, flavorful dish that everyone loves and can’t get enough of.

INGREDIENTS

For the Salad

  • 2 cups romaine lettuce, thinly sliced
  • 1.5 cups red cabbage, thinly sliced
  • 1 cup napa cabbage, thinly sliced
  • 1 cup shredded carrots
  • 1 cup cooked and cooled shelled edamame
  • 1 red bell pepper, thinly sliced
  • 1 cup diced cucumber
  • ½ cup sliced scallions
  • ¼ cup minced fresh cilantro
  • ½ cup chopped cashews

For the Thai Peanut Dressing

  • ½ cup peanut butter
  • 2 tablespoons low-sodium Tamari or soy sauce
  • 1.5 tablespoons maple syrup
  • 1 teaspoon Sriracha
  • 1 teaspoon sesame oil
  • 1.5 tablespoons fresh lime juice (juice of one lime)
  • ¼ cup water (add more as needed for desired consistency)

INSTRUCTIONS

  • Prepare the Salad: Combine all salad ingredients in a large bowl and toss gently to mix.
  • Make the Dressing: Add all dressing ingredients to a blender and blend until smooth. If needed, thin the dressing by adding water ½ teaspoon at a time until you reach your preferred consistency.
  • Assemble the Salad: Drizzle some dressing over the salad and toss to coat. Add extra dressing as desired.
  • Serve and Enjoy: Finish with an additional drizzle of dressing, if desired. Serve chilled and enjoy!
