INGREDIENTS
- 12 ounces brown rice noodles (or any noodles of your choice)
- 5 ounces sliced mushrooms (shiitake, baby bella, etc.)
- 2 cups chopped bok choy or kale
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- ¼ cup chopped green onion (mostly the white part, save green for garnish)
- ⅓ cup low-sodium soy sauce or tamari
- 2 tablespoons water or vegetable broth
- 2 teaspoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon coconut or brown sugar (adjust to taste)
- 2-3 tablespoons honey (or maple syrup for a vegan option)
- ¼ teaspoon red pepper flakes
- 1 tablespoon cornstarch
INSTRUCTIONS
- Cook the noodles according to the package instructions.
- While the noodles are cooking, mince the garlic and grate the ginger. Heat a pan with your choice of neutral oil (olive oil works well). Add the garlic, ginger, and chopped green onion (white parts) and sauté for about 3 minutes, or until lightly golden brown.
- Add the sliced mushrooms and chopped bok choy to the pan. Sauté for 5-7 minutes, or until the vegetables are wilted.
- In a small bowl, whisk together the soy sauce, water or vegetable broth, sesame oil, rice vinegar, sugar, honey, red pepper flakes, and cornstarch.
- Once the noodles are cooked, combine them with the sautéed vegetables and pour the sauce over the mixture. Stir to coat the noodles and veggies evenly.
- Let the dish simmer for about 5 minutes to allow the sauce to thicken and the flavors to meld together. Taste and adjust the seasoning as needed (add more soy sauce if you prefer a saltier, saucier dish).
- Serve warm, garnished with chopped green onions.
