NO BUTTER CHOCOLATE CHIP COOKIES

This is my most-loved cookie recipe—my original no-butter chocolate chip cookies! Using oil instead of butter, these butterless cookies are always a hit, coming out perfectly chewy and sweet every time.

INGREDIENTS

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup vegetable oil
  • 1 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 cups semisweet chocolate chips

INSTRUCTIONS

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer, combine the vegetable oil, brown sugar, and white sugar. Mix with the paddle attachment until smooth and well combined.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla and almond extract.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined. Gently fold in the chocolate chips.
  • Using a cookie dough scoop, portion the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  • Bake for 8-9 minutes, or until the edges are golden. Allow the cookies to cool on the pan for a few minutes before transferring them to a wire rack.

NOTES

  • For easy removal, line your baking sheet with parchment paper or use a silicone baking mat.
  • Make sure to space the cookie dough balls apart to prevent them from spreading into each other while baking.
  • Using a cookie scoop ensures uniform-sized cookies that bake evenly.
  • Let the cookies cool on a wire rack before serving to avoid them falling apart.
  • For thicker cookies, chill the dough for 30 minutes to an hour or even overnight. This helps the dough hold its shape and reduces spreading.
