Mashed potatoes are a versatile dish that can be customized to suit any taste. From classic to gourmet, there’s a mashed potato recipe for everyone. Learn how to make the perfect mashed potatoes, from choosing the right potatoes to adding your favorite flavorings.

INGREDIENTS

  • 2 kg small, waxy potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • Pepper, to taste
  • 3 sprigs fresh thyme (or ½ teaspoon dried thyme)

INSTRUCTIONS

  • Prepare the Potatoes:
    • Rinse and scrub the potatoes well. Place them in a large pot, cover with water, and bring to a boil.
    • Simmer over medium heat, covered, for 15-20 minutes, until tender. Cooking time will vary based on potato size.
  • Prepare the Oven and Marinade:
    • Preheat the oven to 180°C (fan-forced) or 200°C (conventional).
    • Line two baking sheets with parchment paper.
    • In a small bowl, mix the olive oil, salt, pepper, and thyme leaves.
  • Smash the Potatoes:
    • Drain the cooked potatoes and let them steam briefly to remove excess moisture.
    • Arrange the potatoes on the prepared baking sheets. Using a potato masher or the back of a spatula, gently press each potato until it splits and flattens to about 1–1.5 cm thickness.
  • Bake the Potatoes:
    • Brush each potato generously with the thyme-infused olive oil mixture.
    • Bake for 20 minutes, or until golden and crispy. If using a conventional oven, rotate the trays halfway through for even cooking.

SERVING TIP

Pair with a yogurt-garlic dip or classic herb dip for extra flavor.
