INGREDIENTS
Muffins
- 5 large very ripe bananas, mashed
- 1 cup butter
- 1 1/2 cups granulated sugar
- 2 tsp vanilla extract
- 4 eggs
- 1 cup sour cream or full-fat plain Greek yogurt
- 2 tsp baking soda
- 1 tsp cinnamon
- 3 cups flour
Streusel
- 10 oz chopped walnuts
- 1/2 cup granulated sugar
- 1 tsp cinnamon
INSTRUCTIONS
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the bananas. Add the butter and beat until smooth. Then, mix in the sugar, vanilla extract, and eggs.
- Add the sour cream, baking soda, cinnamon, and flour. Stir until well combined, then scoop the batter into muffin liners, filling them about 3/4 full.
- In a small bowl, combine the streusel ingredients. Sprinkle a tablespoon of the mixture over each muffin.
- Bake for 25 minutes or until a toothpick comes out clean.
- Allow the muffins to cool to room temperature, then store them in an airtight container.
