APPLE CINNAMON OATMEAL PORRIDGE

Whip up a cozy, creamy oatmeal porridge perfect for fall mornings, packed with tender, sweet apples and a warm hint of cinnamon spice.

INGREDIENTS

Oatmeal:

  • 1 cup thick-cut rolled oats, gluten-free
  • 1 medium Granny Smith apple, peeled and diced
  • 4 cups almond milk (or your preferred plant-based milk)
  • ½ cup condensed milk
  • ¼ cup pure maple syrup
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • Pinch of sea salt

Caramelized Apples:

  • 1 medium Gala apple, sliced with skin on
  • 2 tablespoons unsalted butter
  • ½ cup organic brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt

Topping:

INSTRUCTIONS

  • Make the Oatmeal: In a medium saucepan over medium-high heat, combine the oats, diced apples, almond milk, cinnamon, nutmeg, allspice, and a pinch of sea salt. Stir to mix well. Bring to a boil, then reduce heat to low and let it simmer for 8-10 minutes, stirring occasionally, until the oats are thickened, creamy, and tender, with about half the liquid remaining. Stir in the condensed milk and maple syrup, and let it simmer for an additional 1-2 minutes. Remove from heat.
  • Caramelize the Apples: In a medium skillet over medium-high heat, melt the butter. Add the brown sugar, cinnamon, and sea salt, stirring until everything is well mixed and begins to bubble, about 2-3 minutes. Add the sliced apples, tossing to coat, and cook for 8-10 minutes, until the apples are tender and the sauce is thickened. Remove from heat.
  • Serve: Spoon the oatmeal into serving bowls, top with the caramelized apples, toasted nuts, and a light drizzle of maple syrup, if desired. Enjoy!
