INGREDIENTS
- 2 medium zucchinis, cut into ¼-inch slices (about 3–3.5 cups)
- 3 teaspoons olive oil
- 2 tablespoons grated parmesan cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
INSTRUCTIONS
- Slice the zucchini into half-moon shapes or 1-inch pieces using a sharp knife. Place the zucchini in a medium mixing bowl.
- In a separate bowl, mix together the parmesan cheese, chili powder, garlic powder, Italian seasoning, salt, and pepper.
- Drizzle the olive oil over the zucchini and toss to coat evenly. Add the seasoning mixture and toss again until the zucchini is fully coated.
- Preheat the air fryer to 400°F. Lightly spray the basket with olive oil cooking spray to prevent sticking. Arrange the zucchini in an even layer in the air fryer basket.
