Air Fryer Quesadillas make for a quick and easy meal on busy weeknights. They come out perfectly crispy on the outside, while the inside stays delightfully gooey with melted cheese.

- 1 Air Fryer
INGREDIENTS
- 2-4 flour tortillas
- ½ cup shredded cheddar cheese
- 1 tablespoon olive oil or cooking spray
INSTRUCTIONS
- Remove tortillas from the packaging and spray one side of each tortilla with cooking spray.
- Place the tortillas in the air fryer basket, with the sprayed or brushed side facing down.
- Add a thin layer of shredded cheese and any optional toppings on top of each tortilla.
- Fold the tortillas in half and gently press them together, or secure them with a toothpick.
- Air fry at 350°F for 8-10 minutes, flipping halfway through, until the tortillas are golden brown and crispy. After 2 minutes, open the basket and gently press the tortillas together if they have opened. The melted cheese will help seal them.
- Remove from the air fryer and serve immediately or rest on a wire rack to maintain crispiness.
NOTES
- For extra crispy tortillas, spray the air fryer basket with more cooking spray.
- Use a pizza cutter for quick, even slicing.
- Optional fillings: refried beans, black beans, onions, bacon, fresh herbs, bell peppers, tomatoes, pepperoni, mushrooms, kale, black olives, chopped garlic. For breakfast quesadillas, try adding scrambled eggs.
- Optional toppings: adobo sauce, sour cream, salsa verde, hot sauce, guacamole, pico de gallo, or Greek yogurt with a splash of lime juice.
- Optional spices: cayenne pepper, garlic powder, curry powder, red pepper flakes, or Italian seasoning.
