Enjoy the flavors of your favorite Japanese restaurant at home with this air fryer hibachi chicken and vegetable dish! Tender chicken and a vibrant mix of veggies are air fried to perfection, making it an easy and delicious dinner for any night of the week.
INGREDIENTS
- 3 boneless, skinless chicken breasts, trimmed of fat and cut into chunks
- 2–3 medium zucchini, thickly sliced and quartered
- 2–3 medium yellow squash, thickly sliced and quartered
- 12 oz white button mushrooms, washed and quartered
- Salt and pepper, to taste
- 3 tbsp minced garlic
- 1/3 cup olive oil, plus 2 tbsp for drizzling
- 1/4–1/3 cup soy sauce
- 1 1/2 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tsp garlic powder
INSTRUCTIONS
- In a large mixing bowl, combine all ingredients except for the 2 tablespoons of olive oil. Stir until the chicken and vegetables are evenly coated.
- Transfer the mixture to the air fryer basket, spreading it in an even layer. Drizzle the remaining olive oil evenly over the top.
- Air fry at 375°F for 15 minutes.
- Serve with steamed white rice and yum yum sauce.
NOTES
- Feel free to adjust the vegetables to your liking. Not a fan of mushrooms? Simply leave them out.
- For a lower sodium option, use low-sodium soy sauce.
- Add extra garlic if desired, but avoid adding more sesame oil as it has a strong flavor.
