INGREDIENTS
- 1/2 peach, thinly sliced or chopped
- 2 tablespoons brown sugar
- 1 tablespoon salted butter
- 1/2 tablespoon salted butter, melted
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
INSTRUCTIONS
- In a microwave-safe mug (10 to 12 ounces), melt 1/2 tablespoon butter with 3 to 4 peach slices and 1 tablespoon brown sugar for 30 seconds.
- In a small bowl, whisk together the melted butter, remaining 1 tablespoon brown sugar, vanilla, milk, flour, baking powder, and cinnamon until just combined.
- Spoon the batter over the peaches in the mug. Do not stir. Place the remaining peach slices on top and sprinkle with the remaining 1 tablespoon brown sugar and a pinch of cinnamon, if desired. Add the remaining 1/2 tablespoon butter on top.
