Ingredients

  • 1 organic, cage-free egg
  • 1 cup organic peanut butter (or almond butter)
  • 1/3 cup organic honey

Optional Add-ins

  • 1/2 cup organic fair-trade chocolate chips
  • 1/2 cup organic raisins
  • 1/4 cup shredded coconut + 1/4 cup pitted dates
  • 1/4 cup chopped dried fruit + 1/4 cup chopped nuts

Instructions

  • Preheat the oven to 350°F.
  • In a bowl, mix all ingredients together, stirring until well combined.
  • Line a cookie sheet with parchment paper. Drop heaping tablespoons of batter onto the sheet, spacing them out. Gently press each cookie with a fork to help them spread.
