10 MINUTE ROASTED CHICKEN AND VEGETABLES – AIR FRYER RECIPE

This quick and delicious Air Fryer Roasted Chicken and Vegetables is a nutritious meal ready in just 15 minutes! Packed with protein, vibrant veggies, and bold flavors, it’s a dish the whole family will love. Plus, it’s low-carb and gluten-free!

INGREDIENTS

  • 1 lb boneless chicken breast or thighs, cut into 1-inch pieces
  • 1 cup zucchini, chopped into 1-inch half moons
  • 1 cup bell peppers, chopped into 1-inch pieces
  • 1.5 cups baby Bella mushrooms, chopped
  • 1 cup purple onion, chopped into 1-inch pieces
  • 2 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp ground black pepper

INSTRUCTIONS

  • Preheat & prep: Preheat the air fryer to 400°F. In a small bowl, mix the garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper.
  • Coat the ingredients: In a large mixing bowl, toss the chicken and vegetables with the olive oil, ensuring everything is well-coated. Sprinkle the spice blend over the mixture and toss again to evenly distribute the seasoning.
  • Air fry in batches: Lightly spray the air fryer basket with olive oil spray. Add half of the chicken and vegetable mixture in an even layer (some overlap is fine).
  • Cook: Air fry for 10 minutes, shaking the basket halfway through. Repeat with the remaining batch until all the chicken and veggies are cooked through. The chicken is done when it reaches an internal temperature of 165°F.
  • Serve & enjoy: Remove from the air fryer and serve hot, garnished with fresh or dried parsley and a squeeze of lemon if desired.
