10 MINUTE PEANUT SAUCE RICE NOODLES

These sweet and spicy peanut sauce rice noodles come together in under 10 minutes, making them an ideal choice for a quick lunch or dinner. Vegan, gluten-free, and packed with flavor—it’s a healthy and delicious dish!

INGREDIENTS

Rice Noodles

  • 150 grams rice noodles (or any type of noodles)
  • Salt (optional—I didn’t need it in mine!)

Peanut Butter Sauce

  • 4 tbsp peanut butter (crunchy or creamy, your choice)
  • 2 small cloves of garlic
  • 1 tbsp light soy sauce
  • 1 tbsp sriracha (or any spicy sauce)—use 1/2 tbsp if you prefer less heat
  • 1/2 tbsp lemon juice
  • 1 tbsp honey (or maple syrup, or 1/2 tbsp sugar)
  • 5 tbsp water
  • 1/2 tbsp sesame oil (optional but highly recommended)

Optional Toppings

  • Sesame seeds
  • Spring onions
  • Crushed peanuts

INSTRUCTIONS

  • Boil the rice noodles according to the package instructions.
  • While the noodles cook, add all the peanut sauce ingredients to a blender and blend until smooth.
  • Pour the peanut sauce over the cooked noodles and toss to combine. Serve at room temperature or chilled. If you prefer them hot, cook for 1-2 minutes on medium heat, adding extra water as needed.
  • Transfer to serving bowls and top with sesame seeds, spring onions, or crushed peanuts. Enjoy!
